Apple Rock Buns
We had lots of apples and Mum asked if I could use them up. I puréed the apples and thought what next! BOL! These would be nice dipped in yoghurt.
Ingredients:
300g plain flour
270g apple puree unsweetened
80g rolled oats
1 medium egg
Method:
1 Preheat oven to 180 fan and line a baking sheet with parchment paper and set aside.
2 Whisk the egg and set it aside.
3 Combine the apple purée, flour, and oats in a large bowl. Pour all but 1 tablespoon of the egg over the mixture.
4 Using a wooden spoon, stir the mixture until a dough forms.
The dough should be tacky.
5 Take a 2-tablespoon-sized piece of dough and roll it into a ball shape.
6 Place the balls onto the baking tray and brush the top of each one with the remaining egg.
7 Bake for 25 minutes, until they are slightly browned.
Remove from the oven and allow to cool before eating.
Storage:
8 Store in an airtight container for up to 2 weeks
