Berry Torte
Berries are my favourite fruit and I wanted to make a cake type recipe. It is that tasty that Mum and Dad said they would have a piece! Cheeky!
Ingredients:
120g oat flour
60g coconut flour
1 ripe banana
125 g unsweetened apple sauce
150g coconut milk
150g berries
Method:
1 Preheat oven to 170 degrees fan.
2 Grease a 6 inch round cake tin & line the bottom with baking paper.
3 In a large bowl, mix together the dry ingredients.
4 In a separate bowl, mash the banana & mix with the unsweetened applesauce and coconut milk until blended.
5 Gradually port the wet mixture into the dry ingredients and stir until you get a smooth, thick batter.
6 Gently fold in the berries, making sure they are evenly distributed throughout the batter.
7 Pour the batter into the cake tin and bake for 25 - 30 minutes, until a toothpick inserted in the center comes out clean.
